Electronic Tongue Taste Analysis of Sweeteners

ABSTRACT: Electronic tongue technology is a new method to detect liquid taste characteristics. The tastes of different sweeteners were analyzed through Astree produced by Alpha MOS Company. The sensitivity and repeatability of electronic tongue sensor were investigated in order to provide theoretical reference and technical support for quality control, product identification and product development of electronic tongue in sweetener.

Sweeteners are homogeneous mixtures of sweeteners or adjuvants, or two or more sweeteners (including two or more) added or not added to a sweetener or adjuvant, which are mixed and processed to give, improve or enhance the sweetness of products. Different sweeteners have different tastes. This experiment was based on the Astree produced by Alpha MOS Company to analyze the tastes of different samples. The sensitivity and repeatability of electronic tongue sensor were investigated in order to provide theoretical reference and technical support for quality control of sweetener and product development.
